As one of Australia’s leading culinary ambassadors, Manfield’s professional culinary life as a restaurateur culminated in three award-winning restaurants: Paramount in Sydney from 1993 to 2000, East@West in London from 2003 to 2005 and Universal in Sydney from 2007 to 2013. She continues to collaborate with chefs and industry colleagues hosting pop-up events in Australia.
An inveterate traveller, Manfield has been hosting bespoke culinary adventures to exotic destinations including India, Italy, South America, Bhutan, France, South East Asia, Spain, Morocco and New Zealand over the past 20 years. With the new world order that 2020 brought, she sharpened her focus to regional Australian destinations including her Tweed Coast Food Adventures, exploring her immediate backyard, and hosting wilderness food safaris to Arnhem Land and the Flinders Ranges, with a view to expanding to other food destinations around Australia.
