Hugh Holds is the founder and distiller at Polemic Aperitif Labs, a boutique distillery focused on unconventional libations, experimental techniques, and local produce. After stints at Starward Whisky, 23rd St Distillery, and Kangaroo Island Spirits, among others, he embarked on his own journey, unshackled from traditions or the need to follow industry trends.
When Holds isn’t running the stills, he's completing a PhD with the School of Agriculture, Food, and Wine at the University of Adelaide. His research investigates the effects of climate change on the future of Australian brandy production.
