A chef and restaurateur with over 20 years of experience, Lachlan Colwill's’s career spans Michelin-starred kitchens in the USA, time in Australia’s celebrated Barossa Valley, and a deep love for Japanese cuisine. After refining his craft in fish butchery, sashimi, and Kaiseki techniques, he co-founded Omotenashi Hobart in 2022 with his partner, Sophie Pope. Driven by a passion for precision and craft, Colwill's work highlights Tasmania’s seasonal ingredients within a Kaiseki framework.
