Luca Baioni is the bartending partner at Latteria Bar, a new gem on Adelaide’s Hutt Street. With 20 years of experience in the beverage industry across Europe and Australia, Luca has worn many hats—barback, beverage manager, brand ambassador, consultant, and now, proud bar owner. 

His deep knowledge and guest-focused mentality are the result of two decades spent behind some of the world’s best bars, studying diverse techniques and styles. His philosophy? Keep it simple, use the best ingredients, and let the flavours shine. Whether it’s a classic with a twist or a brand-new creation, Luca is passionate about bringing memorable experiences, keeping an unpretentious approach.
