Sometimes the stars align. Chefs with two wildly successful restaurants step out, bound for shared kitchen and a dinner celebrating their stories. O Tama Carey and Mat Lindsay are on their way.
While this remarkable duo are partners in life, their professional paths rarely cross. Not this time. Expect an eclectic offering with nods to Sri Lanka, Japan and beyond: a meal spanning heritage alongside the here and now.
Carey is best known for Lankan Filling Station in Darlinghurst, a casual diner joyfully guided by traditional flavours. She grew up within a food-loving family in South Australia, began cooking professionally during time in London and took a job at the French Bistro Moncur on return to Sydney. Next was a Japanese restaurant, followed by five years of Chinese cuisine at the groundbreaking Billy Kwong. She would meet Lindsay there, later changing paths to Italian fare at fellow city venue Berta’s. Next: her first solo restaurant. More than five years later and Lankan Filling Station continues to earn acclaim, loved for its warmth and authenticity.
Modern Australian food is very much in Lindsay’s wheelhouse. He delights diners at Ester and Poly, his two Sydney restaurants, both featuring wood-fired ovens and deliciously diverse seasonal menus, and at the casual A.P Bakery. Fine dining was unknown to this former graphic design student before a fateful visit to Rockpool in search of work. It revealed a world that continues to captivate Lindsay – one that has seen him dubbed a genius by Nigella Lawson and develop a signature style beloved by industry peers and home cooks alike.
What’s on the menu for this extraordinary evening? It remains a secret. What we can say, though, is that it will be a revelation.
