Dining looks different in a world under pressure. It means working in sync with nature and returning to practices abandoned in pursuit of ease. Keeping an open mind while flavour remains at the forefront. It’s in that spirit that Douglas McMaster, Jacqui Challinor and Kane Pollard will unite, sharing choices changing the game.
British McMaster is a chef, author, presenter and owner of Silo London – the world’s first zero waste restaurant. Recognised by the World’s 50 Best Restaurants among young people shaping the future of gastronomy, he considers waste a failure of the imagination.
Challinor, meanwhile, is a leading light in Australian hospitality: a brilliant chef and advocate for mental health across a notoriously demanding profession. Earlier this year she joined Melbourne restaurant group Trader House as development chef, working with the team responsible for venues including Gimlet, Supernormal, Apollo Inn and Cutler. Honest, real and flavourful fare is Challinor’s signature, together with a passion for local ingredients and in-house production.
Tasting Australia food curator Kane Pollard is also set to star. He leads Adelaide Hills drawcard Ondeen and the beloved Topiary, a teahouse turned restaurant, both inspired by South Australia’s seasonal bounty and the excitement of working with overlooked, often foraged ingredients.
